This is pretty much the only way I will eat broccoli because, let’s face it, broccoli is not that great. But since we must eat our greens, by golly I’m gonna find a way to make them taste great! My toddler will even eat these, if he’s in the mood of course. You can use this recipe as a template to roast pretty much any vegetable by just adjusting the time! Pretty cool, huh?!
Roasted Broccoli
Ingredients
2 heads of broccoli, cut into florets
3-4 T olive oil
1 ts garlic powder
1 ts onion powder
juice of 1/2 a lemon
salt and pepper
1/4 ts red pepper flakes (optional)
Directions
Heat oven to 400ºF.
Rinse and dry the florets.
Mix all ingredients in a plastic storage bag and massage broccoli.
Bake for 10 minutes, flip, bake for another 5-10 minutes until edges browned and crispy.
Tip: Make sure broccoli is thoroughly dry so that it gets crispy, it’s even better if you cut up broccoli ahead of time and store in fridge a day or so with a paper towel before you use.
