Roasted Bacon Brussels Sprouts and Balsamic Glaze

Roasted Bacon Brussels Sprouts

Ingredients

1 lb brussels sprouts

2 slices of bacon, cut into pieces

salt and pepper

Directions

Preheat oven to 400ºF.

Cut ends off brussels and cut again in half lengthwise (may have to quarter if huge).

Lay out on parchment lined roasting pan with a lip. Place raw bacon pieces on top of brussels to get some on each piece.

Roast for 15 minutes, toss around in rendered bacon fat, roast another 10 to 20 minutes until bacon crispy and brussels browned how you like them.

Optional Balsamic Glaze: heat up a small skillet over medium heat, once hot pour in 1/3 cup balsamic vinegar and swirl around pan as it bubbles, let reduce until it gets thick and syrupy and can coat the back of a spoon.
