Crispy Cast Iron Thighs

Crispy Cast Iron Thighs

Ingredients

4-8 organic chicken thighs, depending on how many you can fit in cast iron skillet

2T grass fed butter, ghee, or lard

salt and pepper

garlic powder or any other spices you like (optional)

Directions

Heat oven to 400ºF.

Pat thighs dry so they brown really well. Season both sides with salt. I like to only season top with pepper. If using any other spices, you can sprinkle them on top as well. Keep it simple, garlic powder is delicious on these.

Heat cooking fat over med high heat in cast iron skillet until fat glistens. Sear chicken with skin side down for 8-10 minutes until crispy and golden brown.

Turn over so skin facing the top and stick in oven for 20-25 minutes depending on how large your thighs are. Let rest for 5-10 minutes before serving.
