Sweet Potato Hash Burger Stack

Ingredients

6-8 slices of bacon (nitrate and sugar free, I like Pederson’s Farms) and grease (don’t freak out, you’re going to be ok)

1/2 red onion, diced

2 sweet potatoes, cubed (or as much as will fit in skillet without overcrowding)

1 lb 80/20 grass fed beef, made into 4 patties

salt and pepper

Toppings: red onion, pickles, tomatoes, bacon, avocado, lettuce, etc.

Directions

Cook bacon in cast iron skillet (preferably), leave the grease (about 4-6 T). Carefully, add cubed potatoes, diced onions, salt and pepper and toss around in grease.

Let cook for about 30 minutes over medium to medium high heat, stirring occasionally, until browned and cooked through. You may need to add more grease or oil depending on how well seasoned your skillet is and how much potato is used.

While sweet potatoes are cooking, heat up grill to 600ºF and season burger patties with salt and pepper. Grill over direct heat for 3-5  minutes on each side, depending on thickness and desired doneness.

Stack burger along with any other toppings you like over the hash and enjoy!
