I call this Jeff’s chili because even before my “paleo” days, I had to come up with this recipe because my husband HATES beans. And, of course, chili traditionally includes beans. He acts like a total baby if there’s a bean even touching anything he’s going to eat. Turned out working awesome for me because I can’t tolerate them anymore. Win-win. And you know what else is a win? This chili. I think I could seriously win a chili cook-off with this recipe. Hope you enjoy it as much as we do!
Jeff's Chili
Ingredients
1 yellow onion, diced
2 green bell peppers, diced
3 celery ribs, diced
4 cloves of garlic, minced
2 lbs grass fed ground beef
1 can diced tomatoes (organic, BPA free)
2-3 cups of chicken broth
6-8 T chili powder (add to taste)
2 T cumin
1 T paprika
1 T onion powder
1 T garlic powder
1/2 ts nutmeg
1/2 ts cayenne (optional)
salt and pepper
Directions
Brown and saute the meat, onion, bell peppers, and celery together until meat cooked and veggies soft.
Drain.
Add meat mixture and the rest of ingredients to crockpot or stockpot to finish cooking.
If using stockpot, simmer on the stove for about 2 to 3 hours. If using crock pot, cook on low for 4 to 5 hours.
