Green Bean Artichoke Casserole

This recipe calls for canned ingredients. I know, I know, canned ingredients are not pretty. But, there’s something about canned green beans that this recipe needs. I’ve tried fresh and it just wasn’t as good. The end 🙂

Green Bean Artichoke Casserole

2-14.5 oz cans green beans

can of quartered artichoke hearts

2T olive oil (maybe a little more if you’d like)

1/4 c almond flour

1/4 c Pecorino Romano (and more to put on top)

2-4 garlic cloves, minced

salt and pepper


Heat oven to 375ºF

Drain artichoke hearts and green beans.

Cut artichoke hearts into smaller pieces if necessary (should be similar in size to green beans).

Toss all ingredients in a bowl and pour into 8″x 8″ baking dish. Sprinkle with some cheese if desired.

Bake for 35-45 minutes until browned.
