Bacon Wrapped Pesto Chicken

4 chicken breasts, pounded to 1/2″ thickness

salt and pepper

4-8 T Spinach Walnut Pesto

4-6 slices of bacon, cut in half



Preheat oven to 375ºF.

Salt and pepper both sides of chicken and spread about 1-2 T of pesto on one side.

Roll up starting at smaller end and secure with a toothpick. Lay bacon slices over top of chicken, tucking under the excess, and secure the ends with toothpicks.

Place prepared breasts on a parchment lined roasting pan and bake for 35 minutes. Let rest 5 minutes before slicing or serving.
