Blueberry Pecan Chicken Salad
whole rotisserie chicken, store bought, meat removed
about 6 T Tessemae’s mayo, Primal Kitchen avocado oil mayo, or homemade
2 green onions, diced
2 celery ribs, diced
1/4 cup chopped pecans
1 T freshly chopped dill
1/2 cup blueberries
salt and pepper if needed
Mix all ingredients except for blueberries in a large bowl until combined. Fold in blueberries carefully so you don’t bust them. Taste to see if you’d like to add salt and pepper. Cover and refrigerate for a bit before serving if you have time.
Serve over spinach or any other salad greens, with jicama tortillas, or bread of that’s your thing!
