Slow Cooker Garlic Ginger Chicken

Here’s yet another easy and versatile recipe to add to your weeknight repertoire! If you are gone all day, you can cook it in a slow cooker, or if you’re short on time you can throw it in the oven! Serve with roasted broccoli or over rice if you need some extra starchy carbs that day and enjoy!

Slow Cooker Garlic Ginger Chicken

  • Servings: 6 to 8

Ingredients

3 lbs boneless, skinless, chicken thighs

6 minced garlic cloves

3 T liquid aminos or Tamari, or 1/2 cup coconut aminos

1 ts ground ginger or about 1 T fresh ginger

1/2 ts crushed red pepper (optional)

juice of one lemon

yellow onion, thinly sliced, optional

*if using oven method: 1-2 cups chicken broth*

toppings: sesame seeds, more liquid aminos or Tamari, hot sauce, chopped green onions

serve over: Roasted Broccoli, white rice, cauliflower rice, etc.

Directions

Throw all ingredients in slow cooker and cook on low 6-8 hours (high 4 hours). Chicken will fall apart when done and you can serve over broccoli or rice or whatever. Boom. Done.

Or, cook in dutch oven with lid at 325º for about 3 hours and add about a cup of chicken broth to make sure there’s enough liquid.
