Roasted Carrots

bushel of carrots, washed and peeled, tops chopped off

2 T melted butter

1/2 ts dried thyme or rosemary or both

1/2 ts dried basil

1/2 ts garlic powder

juice of half a lemon or orange

salt and pepper to taste


Heat oven to 400ºF.

Combine all ingredients in a Ziploc storage bag and massage to evenly coat. Spread out carrots onto a sheet pan lined with parchment paper.

Bake 15 minutes, flip over, bake another 10-15 minutes until they reach desired doneness. Enjoy!
