Italian Bacon Meatloaf (Grain Free)

So this meatloaf has a very peculiar ingredient…..and it’s almond butter! Instead of using breadcrumbs, the added fat from the almond butter keeps the meatloaf moist without the added carbs and anti-nutrients 😉

Italian Bacon Meatloaf (Grain Free)

2 eggs

1/2 cup almond butter

2 celery ribs, finely chopped

white and light green parts of a bundle of green onions, chopped

4 cloves of garlic, minced

1/2 ts dried parsley

1/2 ts dried basil

1/4 cup tomato paste

salt and pepper

2 lbs grass-fed beef 85/15

3 pieces of bacon, halved


Preheat oven to 350ºF. Combine all the ingredients besides the beef and bacon in a large bowl. Add in ground beef and work in until combined with egg mixture.

Spread out meat mixture in a 1.5 quart loaf pan. Place bacon pieces on top, tucking into the sides. Bake for 1 hour and 15 minutes. You can turn on broiler for about 5 minutes so bacon gets crispy at the end if you want. Remove from the oven and let rest 10 minutes before slicing and serving. Hope you enjoy!
