Slow Cooker Chicken and Root Veggie Soup
1.5 lbs boneless, skinless chicken thighs
4 celery ribs, chopped
1 yellow onion, sliced thinly
4-6 carrots, peeled and sliced
4 parsnips, peeled and sliced
handful of chopped celery leaves
handful of chopped parsley
4 cups organic or homemade chicken broth or bone broth
salt and pepper to taste
Throw all ingredients in the slow cooker. Stir to combine. Cook on low 6-8 hours. During the last hour, you can shred the chicken up with a fork so it soaks up the juices.
