Peanut Butter Cups

I loooooove peanut butter cups! I love anything with nuts and chocolate, really. These can be a fat bomb snack and totally sugar free. Or, you can use a sweeter chocolate and add some honey or maple syrup and make them more comparable to a Reese’s! You decide 😉  

Peanut Butter Cups

Ingredients

4 oz chocolate bar (I like 100% cacao, but use whatever you like if you want it sweeter)

1 T coconut oil

1/2 cup all natural peanut butter (peanuts only ingredient)

1 ts vanilla extract

1 T coconut oil

dash of salt

optional:  honey or maple syrup to taste

mini parchment liners and mini cupcake tin

Directions

Melt chocolate with coconut oil either very slowly and carefully in the microwave (stirring often), or in a double boiler.

Line cupcake tin with liners and spoon enough chocolate on the bottom to cover. Use the back of a spoon or mini spatula to spread the chocolate up the sides a bit.  Place in freezer a few minutes to set.

While that’s setting, blend peanut butter and the rest of ingredients in a blender or food processor until really smooth. Taste and see if you want to add sweetener.

Scoop about 2 tsp peanut butter mixture into each chocolate lined liner. Place in freezer a few minutes until set.

Spoon chocolate on top of peanut butter so that it covers. Place in freezer to set.

Store in fridge or freezer in a covered container. Enjoy when you need a treat or snack!
