Banana Bread Muffins (flour free, dairy free, sugar free)

These lovely muffins are free of sugar, flour, and dairy and are toddler approved! If you want them sweeter, feel free to add sugar of your choice! 

Banana Bread Muffins

Ingredients

1 cup natural almond butter (thick, almonds should be only ingredient)

1 1/2 cups mashed banana (about 3 brown bananas)

2 eggs

2 T pumpkin pie spice

2 ts vanilla

1/2 ts baking soda

1/2 ts baking powder

pinch of salt

parchment cupcake liners

optional: add chocolate chips, nuts, blueberries

Directions

Heat oven to 350ºF.  Line muffin tin with parchment liners.  Blend bananas in blender to mash it until you get 1 1/2 cups.  Add the rest of ingredients and blend just until combined.

Scoop into muffin liners (about 3/4 full).  Bake for 14 – 17 minutes until toothpick comes out clean.  Let cool a few minutes in muffin tin and then transfer to wire rack to cool completely.  Store in fridge after a day or two.
