Ranch Chicken Salad

I love combining new things to make healthy salads. Use what’s in season and getting in your protein and veggies will never be boring!

Ranch Chicken Salad

Ingredients

rotisserie chicken, chicken removed and diced

few sprigs of chopped dill

3 celery ribs, chopped

3 stalks of green onion, chopped

1/4 cup roasted pecans, chopped (can top with more)

juice of 1 lemon

1/4 – 1/2 cup dried cranberries, apples, grapes, raisins, or blueberries

about a 1/2 cup ranch (homemade, Primal Kitchen, Tessemae’s)

salad greens: romaine, arugula, spinach

To make your own ranch: whisk together 3/4 cup homemade mayo (or Chosen Foods or Primal Kitchen avocado oil mayo), 4 T coconut milk or whole milk, 2 T fresh chopped dill, 1 minced garlic clove, 2 T chopped  green onion, 1/2 to 1 whole juiced lemon.

Directions

Combine all ingredients and serve over green of choice!
