Orange Pomegranate Brussels Salad

I love to find ways to use pomegranate seeds when they’re in season because they’re such a pretty color! The more color we can get into our diet, the better! This side dish is super fast to whip up! 

Orange Pomegranate Brussels Salad

Ingredients

10 oz shaved brussels sprouts

1/4 cup freshly squeezed orange juice (one or two oranges)

1/4 cup olive oil

zest of an orange

1/2 cup pomegranate seeds (or more if you’d like)

bundle of green onions, chopped

1/4 cup chopped walnuts or pecans

Toppings: goat cheese (before serving)

Directions

Toss all ingredients (besides goat cheese) in a bowl or shake together in a container with a lid. You can make this ahead and let sit in the fridge, but you may want to take out to come to room temp before serving.
