These are so yummy and a great alternative to white potatoes if those are problematic for you. You might want to double this recipe…just a heads up!
4 large parsnips, peeled and cut into fries
1 – 2 T avocado oil (I like Chosen Foods)
sea salt to taste
Heat oven to 375ºF and line a sheet pan with parchment paper. Lay parsnip fries out on pan and toss in the avocado oil. Spread fries out in one single layer so they’re not touching and season with salt.
Bake for about 25 minutes. Flip one by one (this is a pain, but worth it) and bake for another 10 to 15 minutes until they look good to you. Serve immediately.
