Roasted Mashed Cauliflower

This mashed cauliflower is amazing!!!!!!!!! You won’t miss the potatoes I promise! If you’ve ever made mashed cauliflower before and written it off as disgusting, please try this one and you won’t be sorry. It has so much flavor and has the consistency of real mashed potatoes, without all the carbs.

Roasted Mashed Cauliflower

  • Servings: 3-4

Ingredients

large head of cauliflower or two smaller, cut into florets (fully dry)

2-4 T olive oil, depending on size of cauliflower

2 ts garlic powder

salt and pepper

some liquid for blending (chicken broth, organic butter, juices from roast or chicken)

Directions

Preheat oven to 400ºF

Put all ingredients in a plastic storage bag, shake up and massage to coat evenly.

Place ingredients on a parchment lined roasting pan.

Roast for 15 min, flip, roast another 15 min or until browned and soft.

Blend the roasted cauliflower in a food processor, blender, or with a hand mixer on high speed. You may need to add a little liquid to get it going such as chicken broth or butter. I like to make this with my Perfect Chuck Roast, so I use some of the cooking liquids (add a little at a time) from that and it tastes phenomenal.
