Ingredients

4 lbs short ribs (chuck)

salt and pepper

4 slices of bacon (and grease)

yellow onion, sliced

1/2 ts cayenne pepper

2-3 cups chicken broth (sugar free, I like Simple Truth)

Directions

Cook the bacon and leave grease in the skillet. Set aside bacon to eat later. Season short ribs generously with salt and pepper. Brown short ribs over medium high heat in the bacon grease on all sides.

In a slow cooker or dutch oven (if you want to make in oven), place browned short ribs, sliced onion, cayenne pepper, and chicken broth (2 cups in slow cooker, 3 if using oven). Stir around if you need to mix in cayenne.

If using slow cooker, turn heat to low and cook for 8 hours. If using oven, bake at 325ºF for 3 hours or until meat falls off the bone.
