Slow Cooker Chicken Fajita Soup

Here’s an easy slow cooker soup to keep you warm as the days get cooler. Simple ingredients and packed with protein to keep you energetic and happy! Serve alone, with plantain chips, over rice, etc.

Slow Cooker Fajita Soup

Ingredients

3 lbs boneless, skinless chicken thighs

red onion, sliced

3 bell peppers (combo of green, yellow, orange, or red), sliced

1 T cumin

1 T chili powder

1/2 ts cayenne (optional)

6-8 garlic cloves, minced

1-2 jalapenos, sliced

can of diced tomatoes (BPA free)

juice of 2 limes

handful of fresh cilantro, chopped

4 cups chicken broth (look for sugar free)

Toppings: avocado, cilantro, cheese, fresh lime juice and slices

Directions

Put all ingredients in slow cooker. Cook on low 8-10 hours.

Chicken will fall apart pretty much on its own or you can stir around the last 30 minutes before serving to break it up. Top with desired toppings and serve with plantain chips or rice.
