Sausage and Kale Stir Fry
2 T grass-fed butter or coconut oil
1 red onion, sliced
about 24 oz sausage, sliced 1/4″ thick (watch for junk ingredients: sugar, MSG, flours/gluten, etc., I like Kiolbassa and Aidells)
1/2 cup chicken broth
2 bundles of curly kale, chopped, ribs removed (seems like a ton but cooks down a lot)
juice of 1 lemon, plus one for garnish
Melt butter and saute onion over med high heat in a large saute pan until onion is caramelized, about 5-7 minutes. Add sliced sausage and cook another 10 minutes or until cooked through.
Remove sausage from the pan and place on another plate, add broth, lemon juice, and kale to saute pan. Turn heat down to medium and saute until kale is just wilted, takes a few minutes.
Add sausage back to the pan just enough to heat back up and stir around. Garnish with lemon slices and that’s it!
