Peanut Butter Blossoms (grain and refined sugar free)

I don’t post treats very often but if you need one….try this one! When I want treats, I want nuts and chocolate! Hershey Kisses are of course not “paleo”, “primal”, or “clean” so eat with caution 😉 Just kidding….it’s a treat, so who cares.

Ingredients

1 cup thick peanut butter (I buy freshly ground, all natural)

1 cup coconut sugar

1 large egg

1 ts baking soda

1 ts pure vanilla extract

pinch of fine sea salt

20 Hershey Kisses

Directions

Preheat oven to 350ºF and line a baking sheet with a Silpat or parchment paper.

In a large bowl, mix peanut butter and coconut sugar so that it’s fully combined. In a separate bowl, whisk egg together with baking soda, vanilla, and salt. Pour egg mixture into peanut butter mixture and mix well until completely combined.

Use a tablespoon to scoop out dough, make into a ball, and place on baking sheet spaced about 2 inches apart. Smash them down a bit with a spatula or the back of a spoon. Bake for 10 minutes (they will be soft but don’t overcook, they harden as they cool). Once out of the oven, immediately press Hershey Kiss into the center so that it stays put. Let cool 5-10 minutes before transferring to wire rack to let cool completely before serving. Enjoy!
