Slow Cooker Shredded Buffalo Chicken

This recipe could not be easier! Only two ingredients to throw in the slow cooker! There are tons of options for toppings and you can serve over many different things including roasted spaghetti squash, parsnips, cauliflower rice, rice, potatoes, etc. You could even use it as a dip to serve with celery or chips! If you don’t like chicken thighs, you could also use chicken breasts but the cook time will probably be less.

Slow Cooker Shredded Buffalo Chicken

Ingredients

2 lbs boneless, skinless chicken thighs (you can trim off the fat if you’d like)

1/2 cup Franks hot sauce

Optional toppings: green onions, bacon, more hot sauce, homemade ranch dressing, blue cheese or goat cheese, etc.

Directions

Put thighs and hot sauce in the slow cooker and cook on low for 8-9 hours. You can shred up the chicken the last hour with two forks so that it soaks up the juices.

Serve over desired veggie and top with desired toppings. The end 😉
