Massaged Kale Salad

This kale salad is so yummy and perfect for spring and summer! No cooking required, you just massage and let it “marinate”. Then, you can top it with whatever you want! I love topping it with whatever fruit is in season!

Massaged Kale Salad

Ingredients

bundle (or two if small) of organic Lacinato kale, chopped

1-2 T fresh lemon, lime, grapefruit, or orange juice

1-2 T olive or avocado oil

any fruits you like: berries, apples, peaches, plums, citrus, pomegranate seeds….

any nuts you like: walnuts, pecans, sliced, almonds, sunflower seeds….

any cheese you like, if desired: goat cheese is my personal fave, blue cheese

Directions

Place your chopped kale in a large bowl. Pour citrus juice and oil over top of kale. Massage kale and oil mixture with hands for a minute until you notice kale breaking down.

Top with desired fruit, nuts, and cheese. Enjoy!

*The massaged kale will last in the fridge for a few days so it’s a great meal prep option! You may want to get it out of fridge ahead of time so the oil can come to room temperature before eating.
