This is one of our favorite ways to eat chicken and is really my dad’s recipe! My dad has coined this recipe “Martin Luther King Chicken” because he grew up on Martin Luther King Blvd. in Houston, but I will just leave it as BBQ chicken for now.
BBQ Half Chickens
Ingredients
whole chicken, cut along back leaving breast in tact
chicken rub to season generously (I like a creole rub but use what you like and watch for junky ingredients)
Directions
Heat gas grill to 325º-350º (this temp works for a 3-burner grill) using the end burners so you have room to put the chicken over indirect heat in the middle.
Season chicken generously with rub and throw it on the grill laying flat with breasts facing up over indirect heat. Allow to grill 45 min to 1 hr depending on how large your chicken is. Flip it breast side down an allow to cook another 45 min to 1 hr until you can easily pull the leg out. That’s when you know it’s done!
Alternatively, you can cook breast side down the whole time for 1 hr 30 min to 2 hours if you aren’t going to be home to flip it. That way all the juices will stay tucked in by the skin.
Allow to rest for about 10 minutes before serving. Enjoy!
