Green Apple Kaleslaw

I’m just obsessed with coleslaw lately and since I don’t add any sugar, I thought it’d be nice to try some apple to sweeten it up! It totally works and it’s totally delicious! 

Green Apple Coleslaw

Ingredients

10 oz bag of coleslaw (shredded cabbage)

1/2 a bundle of chopped Lacinato kale

green apple, sliced like matchsticks

bundle of green onions, chopped

1/2 cup to 3/4 cup avocado oil mayo (Primal Kitchen, Chosen Foods, homemade)

1/2 ts celery salt

1/4 ts dry mustard powder (optional)

2 T white or apple cider vinegar

salt and pepper to taste

Directions

Mix together cabbage, kale, apple, and onions in a large bowl. In a separate bowl, combine mayo (add what you want but dressing will get runnier as it sets from the vinegar), spices, and vinegar.

Pour mayo mixture over cabbage mixture and combine (I like to use a bowl with a lid and shake to combine). Taste and add salt and pepper.

Let sit in fridge to chill before serving. Enjoy!
