Bacon Roasted Cruciferous Veggies

Let’s face it. All veggies taste good roasted in bacon. Super easy and super tasty. I used yellow cauliflower in this recipe just because I saw it at the store and it looked cool, but you can use any! Pretty much all veggies can be roasted this way and it’s a great recipe to make ahead of time and have throughout the week to re-heat. 

Bacon Roasted Cruciferous Veggies

  • Servings: about 4-6

Ingredients

head of cauliflower, chopped

bag of brussels sprouts (ends chopped off and halved lengthwise)

4-6 slices of bacon, chopped

salt and pepper to taste

Directions

Heat oven to 400ºF. Place veggies in a single layer on top of parchment paper lined sheet pan. Place a piece of bacon on top of each piece of veggie.

Roast for 15-20 minutes, toss around to cover veggies in rendered bacon grease, roast another 15-20 minutes until they reach desired crispness. Serve hot and enjoy!
