Citrus Brussels Sprouts Salad

This is the perfect meal prep salad because it will hold up well in the fridge for several days! Also a great side dish as the days get too hot to handle! 

Citrus Brussels Sprouts Salad

Ingredients

Dressing:

juice from one orange (about 1/3 cup) and zest

juice from one lemon and zest

1/3 – 1/2 cup olive oil

1 T dijon mustard

3 sprigs of thyme, leaves stripped

salt and pepper to taste

optional: add a little honey to tast

Salad:

2 – 10 oz bags of shredded brussels sprouts (or half shredded cabbage, half brussels)

bundle of green onions, chopped

1/4 – 1/2 cup sliced almonds

2 oz raisins or dried cranberries (diced apple would even work well)

optional toppings: goat cheese or bacon (if serving right away)

Directions

Whisk together ingredients for the dressing in a small bowl. In a large bowl (preferably with a lid), mix together salad ingredients. Pour dressing over salad, combine, or shake up if you have a lid. You can serve right away or let sit in fridge so the acid in the dressing breaks down the brussels and the flavors combine. If desired and serving right away, top with goat cheese and bacon crumbles.

Will keep in fridge a few days (bacon does not hold up very well though).
