Citrus Brussels Sprouts Salad

This is the perfect meal prep salad because it will hold up well in the fridge for several days! Also a great side dish as the days get too hot to handle! 

Citrus Brussels Sprouts Salad

juice from one orange (about 1/2 cup) and zest

juice from one lemon and zest

1/3 – 1/2 cup olive oil

1 ts dijon mustard

3 sprigs of thyme, leaves stripped

salt and pepper to taste


2 – 10 oz bags of shredded brussels sprouts

bundle of green onions, chopped

1/4 – 1/2 cup sliced almonds

2 oz raisins or dried cranberries (diced apple would even work well)

optional: goat cheese or bacon (if serving right away)


Whisk together ingredients for the dressing in a small bowl. In a large bowl (preferably with a lid), mix together salad ingredients. Pour dressing over salad, combine, or shake up if you have a lid. You can serve right away or let sit in fridge so the acid in the dressing breaks down the brussels and the flavors combine.

Will keep in fridge a few days (bacon does not hold up very well though).
