Jicama Tacos with Sauteed Onions
2 T Kerrygold butter
2 large yellow onions, sliced
2 lbs grass-fed ground beef
2 T taco seasoning (clean, gluten free, MSG free; I use Fiesta, Wildtree, or Primal Palate)
Toppings: lime, cilantro, cabbage, goat cheese, hot sauce, avocado or guacamole, salsa, pico, etc.
Heat butter in a large skillet over med-high heat. Add onions and cook, stirring occasionally until they are caramelized. Remove from pan and set aside.
Add ground beef to skillet and brown. Add taco seasoning according to directions on label. You can drain and add water or leave fat and add half the water.
Add meat and onions on top of jicama tortilla and add desired toppings!
Also great to serve over rice, raw cabbage, sweet potato, or plantain chips.
