Jicama Beef Tacos with Sauteed Onions

Ingredients

2 T Kerrygold butter, olive oil, or avocado oil (I love Primal Kitchen brand)

2 large yellow onions, sliced

2 lbs grass-fed ground beef

2 T taco seasoning (clean, gluten free, MSG free; I use Fiesta, Wildtree, or Primal Palate)

1/2 – 1 cup water

jicama tortillas

Toppings: lime, cilantro, cabbage, goat cheese, hot sauce, avocado or guacamole, salsa, pico, etc.

Directions

Heat oil in a large skillet over med-high heat.  Add onions and cook, stirring occasionally until they are caramelized.  Remove from skillet and set aside.

Add ground beef to the same skillet and brown over medium heat.  Add taco seasoning and water (you can drain and add 1 cup of water or leave fat and add half the water). Simmer on med-low until water cooks out.

Add meat and onions on top of jicama tortillas and add desired toppings!

Also great to serve over rice, raw cabbage, lettuce wraps, sweet potato, or plantain chips.
