Salami and Watermelon Salad with a Balsamic Glaze

Ingredients

arugula

chopped watermelon

uncured salami slices

goat cheese

good quality balsamic vinegar

Directions

To make the balsamic glaze, use about 2-3 tablespoons of balsamic vinegar per serving. Heat the balsamic vinegar in a saute pan, bring to a boil, and then turn the heat down to low. Let simmer about 20 minutes, stirring occasionally, until it coats the back of a spoon.

Place ingredients over arugula and top with the balsamic glaze.
