Meat Lovers Zoodle Pizza
Ingredients
4 large zucchini or 6 medium zucchini, zoodled (can be done in advance)
salt
1 lb grass-fed and finished ground beef (90/10) or good quality ground sausage
about 4-6 garlic cloves, minced
about 3 cups tomato sauce (I like Pomi brand)
6 oz tomato paste
salt and pepper
4 oz uncured pepperoni slices
fresh basil
optional: 5 oz baby kale or spinach
toppings: olives, mushrooms, grated romano cheese
Directions
After you “zoodle” your zucchinis, salt them and let sit on a kitchen towel for at least 30 min to 1 hr and you can ring out the excess water before using. If you want to do this a day or two in advance, zoodle your zucchinis and place them in a container with paper towels on top and bottom to do all the work for you.
In a large frying or saute pan, brown meat, throw in minced garlic and let saute a few minutes until fragrant. Throw in sauce and paste and stir until combined. Add spinach or kale at this time if using. You can let this simmer a little while if you have time. Add salt and pepper to taste.
If there’s enough room in pan, add zoodles and stir to combine. If there’s not room, place zoodles in a 9″ x 11″ baking dish and pour meat sauce on top. Place pepperonis on top of zoodle mixture and add any other toppings you’d like.
Bake at 375ºF for about 30 min or until browned on the edges and bubbly. Serve with fresh basil and more cheese if you please.
