Carrot Salad

This is such an awesome and easy summer salad! I used a bag of shredded carrots here, but it would taste more fresh if you shredded your own (pain in the butt, yes). This will even last in the fridge for a few days to eat as a snack or with your lunches. 

Carrot Salad

  • Servings: about 6

Ingredients

2-10 oz bags of shredded carrot (for better flavor you can shred your own, about 6 cups)

1 granny smith apple (cut in to matchsticks)

2-4 oz raisins

1/2 cup chopped walnuts

1/2 cup avocado oil mayo (Primal Kitchen or Chosen Foods)

juice of 2 lemons and zest

Directions

In a large bowl with a lid, combine carrots, apple, raisins, and walnuts. In a small bowl, stir to combine lemon juice, zest, and mayo. Pour mayo mixture over carrot mixture and stir to combine or place lid on a shake. Let sit in the fridge for a few hours before serving.
