Slow Cooker Carne Asada

This was my first time to cook a flank steak in the slow cooker and it turned out awesome! You can serve this over rice, cabbage, sweet potatoes, tortillas or jicama tortillas to make it work for you and your family! 

Slow Cooker Carne Asada

Ingredients

avocado oil or olive oil for browning

about 2 lbs flank steak

salt and pepper

large red onion, sliced

2 T taco seasoning, maybe more to add later if you want it

juice of 2 limes

1 cup chicken broth

Optional toppings: cilantro, hot sauce, salsa, lime juice, avocado or guacamole, jalepenos, lime juice, cheese, sour cream

Serve over: rice, jicama tortillas, raw cabbage, tortillas, sweet potatoes, etc.

Directions

Heat a tablespoon or two olive or avocado oil in a skillet over medium high heat (or brown in your slow cooker if you have that option). Season flank steak generously with salt and pepper. Place in skillet and brown for a few minutes on each side.

Place flank steak and other ingredients in the slow cooker and cook on low heat for 8 hours. The last 30 minutes to an hour, you can shred up the meat so it soaks up the juices. Taste to see if you’d like to add some more taco seasoning.

Serve over whatever you want and top with toppings of choice! If you really want to make it extra tasty, brown the meat and some juice in a skillet or broil in the oven to make it a little crispy before serving. I do this the next day for leftovers to change it up a bit and it really brings out all the flavors.
