Peanut Butter Chocolate Chip Cinnamon Raisin Cookies (Flour-Free)

That’s a mouthful, but I couldn’t think of what else to call them so you would get the full effect 😉 I promise that mouthful will be happy. The best part is, they’re totally flour free so you don’t have to buy any funny stuff.

Peanut Butter Chocolate Chip Cinnamon Raisin Cookies

Ingredients

1 cup thick, natural peanut butter

1 cup coconut sugar

1 large egg, room temperature

1 ts baking soda

1 ts vanilla extract

1 ts cinnamon

1/4 cup raisins (maybe a little more, if desired)

1/4 cup chocolate chips (maybe a little more, if desired)

pinch of sea salt

Directions

Heat oven to 350ºF and line a baking sheet with parchment paper.

In a small bowl, mix together: egg, baking soda, vanilla, sea salt, and cinnamon. In a larger bowl, mix together peanut butter and coconut sugar. Pour egg mixture into peanut butter mixture and combine. Fold in raisins and chocolate chips.

Use a tablespoon to scoop out dough, form into balls, place on baking sheet a couple inches apart, and smash down a bit with a spatula or fork.

Bake for 8-9 minutes. They will be soft when you pull them out, but don’t overcook because they will harden. Let cool 5 minutes and transfer to a wire rack to fully cool.
