One of the best ways you can set yourself up for success for a week of healthy eating is to make a big pot of meat that you can put in wraps or salads. My favorite way to make a big cut of meat that I think is the most tasty, is to braise it in a dutch oven. All you need is some seasoning, broth, and meat. And, you could really use this recipe for any cut of meat, but the cooking time will vary.
Lazy Taco Pulled Pork
Ingredients
3 lb pork butt or shoulder (a beef chuck roast is also excellent!)
2 T avocado oil, ghee, or grass-fed butter
taco seasoning (I love Primal Palate, otherwise check for junky ingredients)
salt, as needed
about 3 cups of chicken broth
Directions
Heat oven to 325ºF. Season pork generously with salt and taco seasoning all over. In a dutch oven, heat about 2T oil over medium high heat. Brown pork on all sides for about 3-5 minutes each side.
Add broth. Put on lid. Put it in the oven for 2.5 to 3 hours until meat falls apart.
When it’s done, shred up the meat using forks so it soaks up all the juices. Don’t you dare throw those juices away! Serve it with jicama tortillas, lettuce wraps, or over any green you like! My favorite is cabbage!
