Chicken Zoodle Soup
This is the best comfort food! Make your own broth if you want a richer flavor, but if you’re short on time, you can certainly use boxed broth and throw in some chicken that’s already cooked. Alternatively, you could throw in some chicken breasts or thighs and cook them with soup ingredients, boxed broth, and shred it up at the end when the veggies and chicken are cooked through.

Fall Sausage Skillet
Aren’t fall veggies just so pretty?! I think it’s so exciting to eat seasonal produce because it provides us with the most nutrient dense options available and keeps our diet colorful, varied, and interesting! This would even be beautiful to serve at Thanksgiving! I like to make my own sausage, and by “make” I mean combine pork and a bunch of spices, but you can buy a good quality ground sausage and skip all the added spices if you want. If you do want to make your own, spices can be funny so if you don’t like the way they smell or know you don’t like certain ones, leave them out. I try to use rosemary all the time and every time I get so mad at myself because I know I just don’t like it!
Slow Cooker Orange Chicken
This is a chicken dish that I make over and over and it’s so easy because you can leave it in the slow cooker all day! This is delicious served over roasted broccoli, cauliflower rice, or even white rice if that’s your thing! If you are sensitive to or avoiding soy, you can use coconut aminos. I personally find coconut aminos to be way too expensive for the dull flavor they provide, so I roll the dice and use non-GMO liquid aminos or a low sodium tamari instead of the popular paleo replacement. You can also choose to sweeten it with some honey if you’d like.
