Pesto Chicken Salad

Chicken salads are so awesome to have in the fridge to grab and have a meal ready in minutes! You can use leftover chicken for this, grill some chicken, or just use a store bought rotisserie chicken.

Pesto Chicken Salad

whole rotisserie chicken, meat shredded

Spinach Walnut Pesto

salt and pepper, if needed

parmesan or romano cheese, grated


Spoon pesto over shredded chicken and mix together until you get it how you like it. Top with salt, pepper, romano cheese and serve over any salad green, in a collard wrap with more veggies, or in a jicama tortilla!

Freeze any leftover pesto with a light layer of olive oil on top to save for later.
