Easiest Mayo Ever

This is seriously magic. All you need is 4 ingredients and an immersion blender! I didn’t invent this method but, I FINALLY found the perfect mix of ingredients for a flavor that I like best! 

Easiest Mayo Ever

1 cup avocado oil

1 egg, room temperature

juice of half a lemon

pinch of salt


In a wide mouth mason jar, pour one cup of avocado oil. Add egg and let sink to the bottom. Add lemon juice and salt.

Place immersion blender over egg so it’s touching the bottom of the glass. Turn on high speed and watch the magic happen. You can raise up the immersion blender as it emulsifies so you mix in the oil at the top and pulse it up and down a few times until totally blended.

Store in fridge for up to a week to use for wraps, dips, and salad dressings!
