It’s summertime and that means lots of salads! Here’s an easy one you can whip up in less than 30 minutes and it leaves plenty for leftovers.
Honey Mustard Pork Tenderloin Salad
Dry Rub Grilled Pork Tenderloin
Granny smith apple, sliced thinly
Optional: walnuts or pecans
For the honey mustard dressing:
1/2 cup Easiest Mayo Ever (Primal Kitchen or Chosen Foods would also work)
juice of 1/2 a lemon
2 T raw honey
2 T dijon mustard
After grilling the pork tenderloin and letting it rest, cut into thin slices. While the pork is grilling or resting, whisk together the ingredients for the honey mustard and slice up your apple.
Top arugula with apple slices, pork, goat cheese, honey mustard, and nuts if you desire. Enjoy!
