Roasted vegetables are by far my favorite way to prepare them. It tastes better, it’s super easy, and you can do it to almost any veggie out there! Challenge yourself this new year and try one new veggie a week….I dare ya!
Slow Cooker Shredded Buffalo Chicken
This recipe could not be easier! Only two ingredients to throw in the slow cooker! There are tons of options for toppings and you can serve over many different things including roasted spaghetti squash, parsnips, cauliflower rice, rice, potatoes, etc. You could even use it as a dip to serve with celery or chips! Tomatillo Chicken and Sweet Potato Chowder
This recipe was adapted from Danielle Walker’s Mexican Chicken Chowder from her Against All Grain Cookbook on pg 32. I simplified the prep and cooking method but the ingredients are very similar.
